BIG Nutrition: Thankful for Thanksgiving Leftovers

Thanksgiving is approaching and this means yummy leftovers used safely following the holiday. My list won’t feature an apple pie milkshake, but will provide some ideas for fantastic leftovers that won’t derail your plans to get back to BIG!

Greek yogurt, cranberry sauce, fruit, and nuts

5-6 ounces (~2/3 c.) of plain Greek yogurt

1 Tbsp. leftover cranberry sauce

½ cup fruit (eg, blueberries, apples, bananas)

2 tsp. chopped nuts (eg, almonds, walnuts) or seeds (eg, chia, ground flax)

 

Lentil Soup with Smoked Turkey

  • Tips: Just this soup alone is not a meal, so serve with a large salad or roasted vegetables and a fruit.

Turkey and Mushroom Pot Pie

  • Tips: Note how they only use a top crust? You can also go without a crust—cook the contents on the stove or in the oven and serve a small portion of baked puff pastry on the side.

Turkey Shepard’s Pie with Two Potato Topping

  • Tips: Replace half of the butter with olive oil for all the taste without all of the saturated fat. To get more veggies, add more to the pie or serve extra on the side.

Leftover Turkey Strata

  • Tips: Pair with a salad and this one is perfect because it has a lot of great veggies inside!
